Assistant Professor - Beef Production Systems

Megan Webb is an Assistant Professor in Beef Production Systems at the University of Minnesota and is located at the St. Paul Campus. She earned her BS in Animal Science from Texas A&M University, her MS in Meat Science from Colorado State University, and her PhD in Meat Science from South Dakota State University. Dr. Webb will be conducting research at the University of Minnesota’s North Central Research and Outreach Center in Grand Rapids. At the Center, there are currently 160 Angus females and the herd will continue to grow to a 250 Angus cow capacity. Annually the herd and offspring will be utilized for beef production system research. Dr. Webb’s focus will be on the utilization of different production management techniques among the industry segments to identify the influence on animal and carcass performance and ultimately meat quality. She will also work with multi-disciplinary teams to evaluate the influence of management and nutrition on the microbiome, environmental sustainability, ag economics, and consumer preference. Through Extension, she will disseminate information to cattle producers to improve management and marketing strategies throughout the beef supply chain and ultimately assist the beef industry improve production consistency and repeatable beef purchases. Dr. Webb has been honored with the National Cattlemen’s Foundation W.D. Farr Scholarship and the Excellence in Graduate Teaching Award from South Dakota State University (2017).
